Yummy Low-Sugar Nutella Swirl Cupcakes

Quick and easy from The Diabetic Pastry Chef

These looked so tasty we had to try them ourselves and they were gone in what seemed to be an instant! People were licking the wrappers, had Nutella on the tips of their noses. Definitely worth a bake, plus they were quick and easy to make!

Ingredients

• ½ Cup + 2 Tbsp Butter – Softened
• 2/3 Cup Whey Low Sugar Substitute
• 3 Eggs, Room Temp
• 2 Tbsp Milk
• ½ Tsp Vanilla Extract
• 7/8 Cup Cake Flour
• 7/8 Cup Whole Wheat Flour (sifted)
• ¼ Tsp Salt
• 2 Tsp Baking Powder
• 12 Tsps Nutella or Rawtella (sugar-free) Hazelnut Spread

Preparation

In a big bowl, cream the butter and Whey Low until light and Fluffy!
Add eggs, one at a time. Add milk and vanilla. Stir in flour (both kinds), salt and baking powder until combined.
Fill cupcake liners (otherwise butter the tin) ¾ full with batter. Top each with 1 tsp. Nutella or Rawtella.

The fun part:

Swirl each of the cupcakes with a toothpick, being sure the batter gets folded over the Nutella (or Rawtella).
Bake at 325 degrees in pre-heated oven for ~20 Min. And, voila! Yummy swirl cupcakes.
